“Behold the Mighty Burger From Forthcoming Purlieu”

As neighborhood bistro Purlieu prepares to open at 237 Fishburne St., chefs John Zucker and Jeff Williams have sampled many, many versions of what has become the restaurant’s signature cheeseburger. Williams, who says he didn’t eat much red meat before the project, estimates that he has consumed close to 500 burgers in the name of research.
The Purlieu burger will be two, lightly seared beef patties (around four ounces each), American cheese, pickled lunch box peppers, shredded lettuce, caramelized shallots, and a Dijon-tinged sauce on a Martin’s Potato Roll. Though, the setup is subject to adjustments before the opening, Zucker and Williams are pretty sure they’ve found the winning combination.
“I am a burger fiend, says Zucker, “I’ve traveled the country eating burgers. In n Out is one of my favorites, though this one definitely not influenced by In n Out. We want it to be good. We want people to come here for an inexpensive burger that tastes great — and we think we found it. Most everyone that has tried it has loved it.”(click here for full article)
